Mostaccioli pasta with beef and vegetables sauce
Focaccia bread
Raspberry drink (sugar-free)
Cran-pomegranate drink (sugar-free)

Pasta with beef and vegetables sauce:
Rehydrated the dehydrated tomatoes, onions, celery, mixed bell peppers, and spinach.
Added basil, garlic, and oregano. Added rehydrated beef.
Poured hot sauce over cooked noodles, and stirred.
Recipe for focaccia bread

1.5 c warm water
3 T olive oil plus extra for drizzling
1.25 T salt
3.5 c white flour
1 T instant yeast
Cheese seasoning packet from 1 5 oz package of au gratin potatoes (substitute for 0.25 c cheese powder called for in original recipe)
4 t mixed basil, oregano, and garlic powder (substitute for pizza dough flavor in original recipe)
1. Lightly grease a 9”x 13” pan and drizzle 1-2 T olive oil on the bottom.
2. Combine water, 3 T olive oil, flour, yeast, 2 t seasonings, and cheese packet and beat well until a sticky batter forms
3. Scoop the batter into the prepared pan, cover with oiled foil or plastic wrap, and let rise at room temperature until puffy, around 60 minutes.
4. Preheat oven to 375°F
5. Poke dough all over with a finger
6. Drizzle top of dough with olive oil and sprinkle on the last 2t of seasonings
7. Bake 35-40 minutes or until golden brown
8. Remove from oven, let stand 5 minutes, transfer to rack, serve warm or at room temperature.
5) Comments/questions:
In the recipe for focaccia bread that Jean left me, it called for 1/4 cup of cheese powder. I could not find any cheese powder provided, so I used some that came in the package of Au Gratin potatoes. The bread was delicious!!
